In Ode of Super Bowl XLVI… Chow down on these

My favorite snacks, most of them guilt free :)

1) Cut up Veggies plain or dipped in humous

2) Green apple sliced, sprinkled with cinnamon OR my new fav is salt & pepper

3) Rice cakes, my favorite is sea salt

4) Seaweed

5) Skinny Pop

Pumpkin Spiced Protein Cakes

Directions:
Pour all the ingredients into your food processor. I mix everything in my vitamix blender, slowly increasing the speed and blending for no more than 1-2 minutes total. Depending on how you like your cakes consistency, turn on high for just a moment (I like most of the flax seed to grind).
Ingredients:
1 can pumpkin puree
1 cup egg whites
4 scoops vanilla protein powder
2/3 cup oats
3 seeded medjool dates
¼ cup flax
½ tsp nutmeg
1 tsp cinnamon
½ tsp pumpkin spice
¼ tsp allspice
¼ tsp baking powder
¼ tsp salt
1 tsp vanilla
Pop in the oven at 375 for 15-20 minutes.  The centers stay a little pumpkin pie like, a little muffin like… They are a little different than anything you’ve tried.
This batter works out to a small 1080 calories and makes 12 cakes ONLY 90 calories each.

Home-made Pumpkin Protein Bars

Pumpkin is chock full ‘o goodness. You can tell by its bright color that it’s going to be going to be good for you. Not only is pumpkin loaded with vitamin A and antioxidant carotenoids, particularly alpha and beta-carotenes, it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, and iron.
Ingredients:
2 cups oatmeal
1 cup non-fat powdered milk
6 scoops protein (pick a low carb, gluten free kind – Rivalus is a great brand at 90 cals per scoop)
6 egg whites
1/4 cup un-sweetened almond milk
1 tsp vanilla
1 can pumpkin puree
1/4 cup pecans
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp all spice
1/2 tsp pumpkin spice
1 tbsp real maple syrup
Directions: I poured and mixed all the ingredients in my new Vitamix blender to mix, then poured into a non-stick pan popped in the over at 350 F for approximately 20 minutes
If you don’t have a good food processor mix the dry stuff separately, stir in liquid ingredients slowly (the consistency will be thick similar to cookie dough).
Cut into squares or bars, pack in little zip lock baggies or air tight container and refrigerate!! You can also freeze them for later!!
WARNING: THEY ARE HIGHLY ADDICTIVE!!!
