Low Carb Banana Walnut Muffins

Ingredients:



  • 4 Eggs

  • 1/4 Cup coconut oil

  • 2 Bananas

  • 4 Dates (pitted)

  • 1 Full dropper liquid vanilla Stevia

  • 1/2 Cup barley flour

  • 1/4 Himalayan crystal salt

  • 1/4 Tsp Vanilla

  • 1/2 Tsp baking soda

  • 1/2 Cup walnuts (chopped)


Directions:



  1. Pre-heat oven at 350F

  2. Place cracked eggs, bananas, dates, vanilla and stevia in your high powered blender or mixer until well combined.

  3. Add barley flour, salt and baking soda to the mixture and blend until smooth.

  4. Stir in walnuts once mixture is ready.

  5. Scoop 1 1/2 TBSPs of the mixture into a lined muffin pan.

  6. Bake at 350F for 25 minutes.

  7. Remove from muffin tray to cool, serve alone or add a little ghee if you’re in the mood for some extra yummy.
