Low Carb Banana Walnut Muffins

Ingredients:
- 4 Eggs
- 1/4 Cup coconut oil
- 2 Bananas
- 4 Dates (pitted)
- 1 Full dropper liquid vanilla Stevia
- 1/2 Cup barley flour
- 1/4 Himalayan crystal salt
- 1/4 Tsp Vanilla
- 1/2 Tsp baking soda
- 1/2 Cup walnuts (chopped)
Directions:
- Pre-heat oven at 350F
- Place cracked eggs, bananas, dates, vanilla and stevia in your high powered blender or mixer until well combined.
- Add barley flour, salt and baking soda to the mixture and blend until smooth.
- Stir in walnuts once mixture is ready.
- Scoop 1 1/2 TBSPs of the mixture into a lined muffin pan.
- Bake at 350F for 25 minutes.
- Remove from muffin tray to cool, serve alone or add a little ghee if you’re in the mood for some extra yummy.
