Vegetable Spotlight | Beets

Published on Friday, June 1, 2012 By Amy Lynn Grover

Beets are an incredible vegetable to eat or drink on the regular, especially when detoxing or cleansing because they are loaded with antioxidants and because of their powerful anti-inflammatory and fungicidal properties.  Beets contain betalains which promote cell structure, repair and regeneration, especially in the liver—the body’s primary detox center.

Beets are great to consume on a regular basis especially after physical exertion because they contain nitrates that converts into nitric oxide; when this powerful molecule is absorbed into the blood stream it dilates the blood vessels by about 400% allowing more oxygen and nutrients to reach your hard-working muscles.

Beets can help in the following problems; Headaches, toothaches, dysentery, lumbago, skin problems, menstrual problems, etc.

Regular consumption can help relieve constipation by stimulating the liver cell function and protecting the liver and bile ducts.  They help in normalizing blood pressure, promoting elasticity of arteries and preventing varicose veins. The iron content in beets make them a powerful blood cleanser and builder.  Beet juice is highly alkaline which makes it effective in the treatment of acidosis.

Betalains are also what give beets their deep red color, so don’t be alarmed when you see a red color in your urine and stools, there is nothing to worry about this is just the color from red beets.
